It's easy when you get the hang of it! Definitely get Audacity - it's totally free and easy to use. Hmu on Disc if you want a tutorial or two - I've done basic edits for my guides and stuff in the past. 

 

Not sure how you'd do "interviews" though - maybe just recorded Disc convos? dunno!
