It has been awhile since I have been on here and I can't remember my UCP email account.

How do I go about updating my email or getting a password reset?

You can open a support ticket through the discord server. This is the link to the LSRP discord server: https://discord.gg/ls-rp. Once you have joined you can open a ticket through the #request-support channel. An admin with be assigned the ticket  to help you recover your account.
